Martin was born in Germany to an English father and a Japanese mother, giving him early exposure to a blend of culinary cultures. He moved to Worcester at a young age and grew up surrounded by diverse food traditions.
Martin and his wife relocated to North Devon, drawn by the quality of the region’s natural larder. In Devon, he found the perfect setting to develop his vision of modern producing‑driven menus rooted in seasonality and locality.
Under his leadership, New Coast Kitchen in Croyde has gained recognition in the Michelin Guide and holds 2 AA Rosettes for its modern British cuisine.
His newest venture, Restaurant Roku, also in Croyde, is a tasting‑menu restaurant that reimagines British cooking through a Japanese lens. The name Roku - meaning “six” - reflects both the structure of the menu and the restaurant’s ethos of slow, thoughtful dining that celebrates flavour, texture and precision.
Martin is passionate about Devon’s natural larder at the heart of his food while integrating the subtle influences of his heritage into refined, modern dishes.
Martin’s competition menu is a celebration of the South West and its films.
