Michele makes her summer dishes
Food consultant Michele Barlow has taken some local produce and made them into some delicious dishes. Her summer tiramisu and Lancashire salad are really easy to make and full of healthy ingredients - oh, and a few naughty ones too. There's no cooking involved, so get stuck in and have a go at making them!
1 packet of Ashbourne Ratafias 1 carton Longley Farm Double Cream Strawberry Bank Damson Gin 1-2 punnets of raspberries
Place the cream in a bowl and add a little damson gin. Whip until soft peaks form. Crush the ratafias and place some in the base of a serving dish. Layer with cream and raspberries. Chill and serve with raspberry coulis (crushed, sieved raspberries) mixed with damson gin.
Lancashire salad 1 bunch of mint Small punnet of Lancashire tomatoes, sliced Half a red onion, sliced Juice of a lemon Zest of an unwaxed organic lemon 2 tbsp of olive oil Good handful of crumbled up Lancashire cheese
Put the sliced tomatoes on a big plate. Rip the mint leaves up and scatter over the tomatoes. Sprinkle the slices of red onion on top, with the pared zest of the lemon. Mix the juice of a lemon with the olive oil and drizzle over the top. Add the crumbled cheese and toss all the ingredients together.
