This ultimate chicken kyiv is golden and crispy and filled with a delicious double garlic butter.
Ingredients
For the chicken kyiv
- 2 chicken breast
- 100g/3½oz unsalted butter
- 3 garlic cloves, finely chopped
- 1 tbsp chopped parsley
- 1 tbsp chopped chives
- 1 tbsp chopped wild garlic
- 100g/3½oz plain flour
- 3 free-range eggs, beaten
- 100g/3½oz breadcrumbs
- sea salt and freshly ground black pepper
For the garnish
- 25g/1oz unsalted butter
- 1 echalion shallot, finely chopped
- 1 garlic clove, crushed
- 50ml/2fl oz white wine
- 150g/5½oz green beans
- 250ml/9fl oz chicken stock
- 150g/5½oz peas
- 10g/½oz watercress
- 1 lemon, juice only
- sea salt and freshly ground black pepper
Method
To make the chicken kyiv, flatten out the chicken breasts evenly, between 2 sheets of parchment paper.
Add the butter and garlic to a blender and blend. Add the herbs and wild garlic. Use baking paper or cling film to roll into a log. Wrap the log and put it into the freezer for at least 1 hour.Or refrigerate overnight.
Slice some of the butter into rounds and put in the middle of the chicken. Roll up and fold the chicken to encase the butter. Chill or freeze for 30 minutes.
Preheat a deep fat fryer to 180C. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
Pre-heat the oven to 220C/200C Fan/Gas 7.
Place the flour into a wide bowl and season with salt and pepper. Add the beaten eggs to another bowl, and the breadcrumbs to a third.
Coat the chicken in the seasoned flour, then the egg, then the breadcrumbs. Repeat the process a second time so that it’s very well coated.
Deep fry until golden, 2-3 minutes. Place on a baking tray and finish in the pre-heated oven for 13-15 minutes or until cooked through.
Meanwhile, to make the garnish, add the butter to a sauté pan.
Once hot, add the shallots and garlic and cook for 20 minutes to soften. Add the white wine and reduce.
Add the green beans and stock and bring to a simmer.
After 5 minutes, add the peas and taste, adding more seasoning if needed. Scatter the watercress over and serve with the chicken.
