This is the perfect midweek supper – tasty salmon pasta in a creamy sauce.

Method

  1. Cook the pasta according to packet instructions in a pan of salted boiling water, then drain.

  2. Meanwhile, heat the oil in a frying pan, add the garlic and red onion and fry for 3–4 minutes or until the onion has softened.

  3. Add the salmon cubes and double cream and continue to cook over a gentle heat for 5 minutes, or until the salmon has cooked through.

  4. Stir in the drained pasta and season with salt and pepper. Sprinkle over the parsley and serve.
